Orange Almond Salad
1 head romaine
½ head butter lettuce
½ cup chopped celery
½ cup fresh bean sprouts
2 T chopped parsley
1 10oz can drained mandarin oranges (or one chopped up fresh orange)
4 t sugar
½ cup sliced almonds
In large salad bowl combine lettuce, celery, bean sprouts and parsley.
On low heat, melt sugar until it is the colour of honey. Add sliced almonds and stir until
The almonds are coated. Take off heat and let cool. Set aside until salad is tossed.
(for a healthier option just use toasted almonds)
Dressing
2 T wine vinegar
juice of half a lemon (equal to 1 T)
½ t salt
1 T sugar
½ olive oil
Dash hot pepper sauce
Combine dressing ingredients and set aside.
Just before serving combine, oranges, almonds, dressing and lettuce.
Serves 4-6.
